Sausage Rolls
Makes 24

Ingredients:
-
500g mince beef
-
1 cup grated veggies (eg. carrot, zucchini, potato, sweet potato) all liquid squeezed out
-
1 cup grated cheese
-
2 eggs
-
1 tablespoon Dijon mustard
-
3 sheets puff pastry or mountain bread
-
1 egg for brushing pastry (optional)

Method:​

Remove puff pastry (if using) from freezer

Pre-heat oven to 180 degrees Celsius

Mix all ingredients together (except pastry and egg)

Cut each square of puff pastry/wrap in half, now creating 2 rectangles per sheet.

Divide mince mixture into 6. Shape 1/6 of mince mixture into a sausage shape and place along the long side of pastry/wrap, roll up to enclose filling
-
Repeat with remaining mixture and pastry/wraps.

Cut each roll into 4 pieces or more for smaller sausage rolls
-
Place on a lined baking tray. Brush with egg (optional)

Bake at 180 degrees Celsius for 20-30 minutes until golden brown.
